Traditional fish sandwiches at the Alkmaar street market. These are all fish on a bun, served with onions. you can see herring (haring), mackerel (makreel), salmon (zalm) and I'm not sure what else!
Instead of the fish on broodje (bread) I tried Hollandse Nieuw, which is fresh raw herring cut up and served with sweet raw onion. I didn't actually expect to like it but I loved it (should have had more!)
After Alkmaar, our tour went to a windmille at Molen. We learned a lot about how they used dozens of windmills to drain the lakes to create agricultural land. This land is called polders, and they have to continuously drain them to keep them from flooding. Today they use electric pumps instead of windmills though.
